Reading a Seed Packet: Organic, Non-GMO, Heirloom, Hybrid — What Actually Matters

Walk into any garden center or scroll through a seed catalog and you’ll encounter a wall of labels: Non-GMO, Certified Organic, Heirloom, Open-Pollinated, Hybrid (F1), Untreated. Most growers have an instinct that some of these are better than others without knowing exactly why — or which ones matter for their actual situation.

Here’s a plain-language breakdown of what each label means, which ones carry real regulatory weight, and which one matters most if you’re saving your own seed.

Non-GMO: Almost a Universal in Home Garden Seed

The seed was not produced through genetic engineering — no genes were inserted from a different organism in a laboratory setting.

“All-natural,” “organic,” or “heirloom.” It simply addresses one specific question: was this variety created through genetic engineering?

GMO seed is almost entirely restricted to a handful of commodity crops — corn, soybeans, canola, cotton, alfalfa, and a few others — sold to commercial growers at industrial scale. The kinds of vegetables you’re growing in an apartment container are virtually never GMO. The label is essentially always true for home garden seed, which is why it carries less actual information than it appears to.

If you want formal verification: look for the Non-GMO Project verification mark, or check whether the company has signed the Safe Seed Pledge — a voluntary commitment by seed companies to neither sell nor knowingly buy or use GMO seed. The Living Seed Company, Baker Creek Heirloom Seeds, and several others featured in the book’s sourcing chapter are signatories.

Organic (Certified): About the Parent Plant, Not Just the Seed

The seed was grown under USDA National Organic Program standards — no synthetic pesticides or fertilizers were applied to the parent plants that produced this seed. Look for the USDA Organic seal on the packet or listing.

That the seed itself is a magic health object. The certification is about how the parent crop was grown, not about the seed’s composition.

If you’re growing organically and care about keeping your system as chemical-free as possible from the start, certified-organic seed is the cleanest entry point. For growers who aren’t particular about organic methods but want vigorous seed from reputable companies, it’s less critical.

High Mowing Organic Seeds (Vermont) and Southern Exposure Seed Exchange carry substantial certified-organic selections, clearly labeled. Baker Creek does not focus on organic certification but maintains a strict non-GMO, untreated, non-patented policy.

Heirloom: History, Not Certification

An open-pollinated variety with a documented history — generally 50+ years — passed down through generations of growers. “Brandywine” tomato, “Black Seeded Simpson” lettuce, “Dragon Tongue” beans: these are heirlooms because they’ve been grown and selected by people over time, not because a laboratory created them.

That it will outperform modern varieties in your specific setup. Heirloom varieties were selected for flavor and regional performance under the conditions where they were grown — not necessarily for apartment hydroponics or container performance. Some heirlooms are extraordinary; others are finicky and inconsistent.

Every heirloom is open-pollinated (see below), which means you can save seed from it and it will grow true to type next season. If seed-saving matters to you, heirloom varieties are worth the investment.

Open-Pollinated: The Label That Matters Most for Seed-Saving

The variety was pollinated by natural means — insects, wind, birds — rather than controlled hand-pollination between specifically chosen parent plants. Seed saved from an open-pollinated plant will grow true to type: next season’s plants will look and produce like this season’s.

A hybrid will not produce true-to-type seed (more on that below). An open-pollinated variety will. If you’re planning to build a seed-saving practice, this is the label to prioritize.

Every heirloom is open-pollinated — but not every open-pollinated variety is an heirloom. Many modern, commercially developed varieties are open-pollinated without having a historical pedigree. Both produce true-to-type seed; heirlooms just have the added layer of documented history.

Hybrid (F1): Conventional Plant Breeding, Not GMO

A hybrid (often labeled “F1”) is the first-generation offspring of a controlled cross between two different, specifically chosen parent varieties. The cross is made deliberately, by hand, to combine desirable traits — disease resistance, yield, uniformity, shelf life — from both parents.

Genetic engineering. Hybrid seeds are created through conventional plant breeding that humans have practiced for thousands of years. “Hybrid” and “GMO” are frequently confused but describe completely different processes.

Seed saved from a hybrid plant will NOT grow true to type. The genetic shuffling that happens in the second generation (F2) means next season’s plants will look unpredictable — sometimes useful, often not what you expected. If you want to replant the same variety next season from saved seed, you need to buy new hybrid seed each year. If seed-saving matters to you, choose open-pollinated varieties instead.

Some hybrid varieties have genuinely valuable traits — disease resistance, container performance, consistent fruit size — that open-pollinated equivalents don’t match. If you’re not saving seed and a hybrid performs better in your setup, there’s no reason to avoid it.

Untreated: What’s On the Seed Coat

The seed has no fungicide or pesticide coating — no chemical treatment on the outside of the seed shell.

For anyone growing organically, or for hydroponic growing where treated seeds can introduce unwanted chemicals into a closed nutrient solution. Most heirloom-focused companies (Baker Creek, Southern Exposure, Seed Savers Exchange) sell untreated seed by default, but it’s worth checking the listing.

A common alternative to chemical seed treatment for disease prevention is seed priming (a hydration treatment to speed germination) or pelleting (a clay or biodegradable coating to make tiny seeds easier to handle) — neither is the same as a fungicide treatment, and both are generally considered acceptable in organic growing.

A Note on Freshness

One label that doesn’t get enough attention: the “packed for” date stamped on most seed packets. Seed germinates less reliably as it ages, and the shelf life varies significantly by crop — radish and onion seed loses viability faster than tomato and squash. For hydroponic and inert-media growing especially, seed vigor and germination rate matter more than in soil (there’s less buffering for a weak start), so buying fresh seed from a company with real inventory turnover is worth the small extra effort.

All of the companies listed in the book’s sourcing chapter sell current-season or well-dated seed. Leftover seed from three seasons ago from a big-box garden center is a common cause of disappointingly low germination rates.
